The olive oil obtained from virgin olive oils by refining methods that do not lead to alterations in the initial glyceridic structure. It has a free acidity, expressed as oleic acid, of not more than 0.3 grams per 100 grams (0.3%) and its other characteristics correspond to those fixed for this category in this standard. This Olive Olive oils with a high acidity level or organoleptic defects that are eliminated after refining. Note that no solvents have been used to extract the oil, oils labeled as Pure olive oil or Olive oil are primarily refined olive oil, with a small addition of virgin-production to give taste.
It has a more neutral flavor than pure or virgin olive oil, making it unfashionable among connoisseurs; however, it has the same fat composition as regular olive oil, giving it the same health benefits. Grapeseed oil is obtained from the seeds of the grapes (vitis vinifera). The grapeseeds are pressed and extracted by mechanical means. The crude oil is refined afterwards. With it’s easy digestibility and good stability, grapeseed oil is highly appreciated for it’s use as a cooking oil and finishing oil. It is a natural source of Vitamin E.
It represents 16% of the olive production in Andalusia and is grown mainly in the Spanish provinces of Seville, Cordoba and northern Malaga. It is collected late in the season (March-April), as black ripe olives for eating. These olives are popular table olives, and are also used to produce oil, though the oil content is lower than some popular Spanish olive cultivars like the Picual.
These plump, fleshy fruits are available in all sizes.We mainly work with MANZANILLA, HOJIBLANCA and GORDALS olives. The fruit of this variety attains its best quality in mild climate and in dredged soil of the Andalusian province within a 20 mile radius of Seville. This variety, up to a short time ago, was the only one permitted to be cured in the green, and grows within the district of Seville.
